Strawberry-Spinach Salad

Spinach is an excellent source of antioxidants. It has beta-carotene, luteine, zeaxanthin and vitamin C. It also is a good source of omega-3 fatty acids.

  • 4 cups baby spinach
  • 1/2 English cucumber, diced
  • 4 cups strawberries, hulled and sliced
  • 1/4 cup minced flat-leaf parsley
  • 2/3 cup toasted cashews


  • 2 teaspoons honey
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons white wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste
