Chia seeds are an excellent source of antioxidants and omega 3 fatty acids. They are among the best plant-based source of omega 3 fatty acids, better than flax seeds. It is also a great source of fiber. One ounce of chia seeds contains 10.6 grams of fiber. Chia seeds are associated with reduced insulin resistance and improved blood sugar control in diabetics. Here is a wonderful dessert recipe for chocolate pudding.
Overnight Chocolate Chia Pudding
1 ½ cup milk (can use almond or soy milk to substitute)
1/3 cup chia seeds
¼ cup cocoa
2 to 5 Tablespoons maple syrup
½ teaspoon cinnamon
¼ teaspoon sea salt
½ teaspoon vanilla
Combine all the ingredients in a shallow container. Stir until well mixed. Cover and refrigerate.
